Holiday Granola
The holidays make me want to bake constantly. What I don't want is the sugar and calories. This recipe has the colors and flavors -nutmeg- of the holidays, with guilt-free baking. Granola takes only 5 minutes to throw together and is so much better and lower in sugar than the store bought variety. We make a big batch and eat it for breakfast with plain Greek yogurt or milk and snack on it throughout the week. For a nutritional boost, add some flax seeds to the mix.
Pour into mason jars and tie with a ribbon for a pretty, healthy, and homemade holiday gift.
Granola with Cranberries and Pistachios
3 cups rolled oats
1/2 cup shelled pistachios
1 Teaspoon freshly grated nutmeg
1/2 teaspoon salt
1/4 cup brown sugar
1/4 cup maple syrup
2 Tablespoons vegetable oil
1/2 cup dried cranberries
Preheat oven to 275 degrees.
In a large bowl toss oats with pistachios, nutmeg, salt and brown sugar. Stir in maple and oil to combine. Spread on a large rimmed baking sheet. Bake for 40 minutes, stirring half-way through. Cool completely on baking sheet. Stir in cranberries.
