Tropical Granola Recipe

The problem with making food from scratch is that it's like coloring your hair. Once you start, it's really hard to ever stop. It happened with pie crusts (I used to think the refrigerated ones were just as good... until I tried an all butter homemade one), and now it's happened with granola. Luckily granola is super easy to make. This one is inspired by my favorite granola, from my favorite place, the Kea Lani, Maui.

I have this for breakfast over plain Greek yogurt or as a healthy snack throughout the day. Yum!




3 cups old fashioned rolled oats
3/4 cup macadamia nuts
1/4 cup walnut pieces
1/2 cup shredded coconut
1/4 cup flax seeds
2 tablespoons vegetable oil
1/2 cup agave syrup, maple syrup, honey, or a combination
1 cup dried tropical fruits, such as pineapple, mango, papaya

Preheat oven to 325 degrees F. Line a large rimmed baking pan with parchment paper.

Toss oats, nuts, coconut, and seeds in a large bowl. Stir oil and syrup or honey in a smaller bowl. Then pour over oat mixture and stir until coated. Bake until golden brown 30-45 minutes, stirring occasionally. Let cool completely. Granola will get crunchy as it cools. Stir in fruit.
